Alfalfa is considered a "bitter" herb containing natural chlorophyll and a source of Vitamins A, C, D, E and K. It contains large amounts of calcium, potassium and magnesium and small amounts of phosphorus, sulphur, copper, cobalt, molybolenum, iron, boron, sodium, fluorine, chlorine and strontium.
Alfalfa is a sprout that is often added to salads. It is also commonly used through the world as animal feed, and it is from this that the name is derived. ‘Alfalfa’ has been linked to the Iranian word ‘aspasti’ meaning ‘horse fodder’. It is a member of the pea family, and the blossom and leaves are similar in appearance to clover. Alfalfa generally grows in rich soil, and sends a deep taproot into the ground. It is a rich source of a range of vitamins and minerals, and is generally considered a nutritive and tonic to the body.
